Pancakes
Light and fluffy.
Ingredients
- All-purpose flour: 1 c
- Sugar: 2 tbsp
- Baking powder: 1 tbsp
- Salt: ½ tsp
- Non-dairy milk: 1 c
- Apple cider vinegar: 1 tsp
- Vanilla extract: 1 tsp
Cookware
- Frying pan
- Large bowl
- Spatula
Method
Heat up a frying pan over medium-low heat.
In a large bowl, mix together all-purpose flour, sugar, baking powder, and salt.

In a measuring cup, mix together the non-dairy milk, apple cider vinegar, and vanilla extract.

Pour the wet ingredients into the dry ingredients and stir to combine.
Let the mixture rest for . This will let the mixture fluff up a bit.
Use a 1/3 measuring cup to scoop out the batter and cook on the pan. Flip with a spatula when you see bubbles start to form on the surface and the edges look set.
