Ingredients

  • Plant milk: 1 c
  • Apple cider vinegar: 1 tbsp
  • All-purpose flour: 2 ¼ c
  • Baking powder: 2 tbsp
  • Granulated sugar: 2 tsp
  • Salt: 1 tsp
  • Neutral oil: ½ c

Cookware

  • Large bowl
  • 2" round cookie cutter (or narrow mouthed glass)

Method

1.

Preheat the oven to 425 ºF.

2.

Combine the plant milk and apple cider vinegar to make a buttermilk.

  • plant milk: 1 cup
  • apple cider vinegar: 1 tbsp
3.

Combine the all-purpose flour, baking powder, granulated sugar, and salt in a large bowl.

  • all-purpose flour: 2 ¼ cup
  • baking powder: 2 tbsp
  • granulated sugar: 2 tsp
  • salt: 1 tsp
4.

Combine the buttermilk mixture and neutral oil.

  • neutral oil: ½ cup
5.

Pour the liquid ingredients into the dry ingredients and combine. The dough should be tacky yet workable. Use extra flour if it's too tacky.

6.

Smoosh the dough out on a table until it's about 1 " thick. You can use a rolling pin if you'd like.

7.

Use a 2" round cookie cutter (or narrow mouthed glass) to cut the biscuits. Alternatively, just cut into squares. If you do circles, after doing your first pass, combine the scraps and re-roll to get extras.

8.

Place on a lined baking sheet so they're just touching each other.

9.

Use your finger to make a little dimple in the middle so that they'll be flat after they rise.
