Vegan Vanilla Cake

Light, fluffy vanilla cake with two petite layers. Frosting omitted.

Preheat the oven to 350 ºF.

Spray two 7-inch round cake pans with non-stick spray and line the bottoms with parchment paper circles.

In a mixing bowl, sift in 1 3/4 cups all-purpose flour. Add 1 cup white granulated sugar, 1 tsp baking soda, and 1/2 tsp salt. Mix together.

Add 1 cup soy milk, 2 tsp vanilla extract, 1/3 cup canola oil, and 1 tbsp apple cider vinegar. Whisk until just combined.

Divide the batter evenly between the prepared cake pans.

Bake for 25-30 minutes, until a toothpick inserted into the center comes out clean.

Let the cakes cool in the pans for a few minutes, then transfer them to a wire cooling rack to cool completely.

Serve plain, or use in another dessert with your preferred frosting or toppings.
