Heat up a frying pan over medium-low heat.

In a large bowl, mix together 1 cup all-purpose flour, 2 tbsp sugar, 1 tbsp baking powder, and 1/2 tsp salt.

In a measuring cup, mix together the 1 cup non-dairy milk, 1 tsp apple cider vinegar, and 1 tsp vanilla extract.

Pour the wet ingredients into the dry ingredients and stir to combine.

Let the mixture rest for 5 minutes. This will let the mixture fluff up a bit.

Use a 1/3 measuring cup to scoop out the batter and cook on the pan. Flip with a spatula when you see bubbles start to form on the surface and the edges look set.
