Preheat the oven to 350 ºF.
Prepare your 8-inch loaf pan by spraying it with cooking spray, lining with parchment paper, and then spraying again.
In a large bowl, mix together 3 medium bananas, 3/4 cup sugar, 1/2 cup plant milk, 1/2 cup neutral oil, and 1 tsp vanilla extract.
In a medium bowl, mix together the 1 1/4 cup all-purpose flour, 1 tsp baking soda, and 1/2 tsp salt.
Slowly pour the dry ingredients into the bowl of wet ingredients, combining with a whisk.
If you want to add mixins, do so now. For a sweeter treat, you can add chocolate chips. It's usually easiest to fold them in with a rubber spatula.
Pour the mixture into your 8-inch loaf pan.
Bake for 60-75 minutes, until a toothpick comes out clean.
Let the bread rest in the pan for 15 minutes.
Finally, transfer to a cooling rack. Let it cool for at least 1 hour, or even better, overnight. This will give it time to develop that nice, shiny top.
