Baked Apple Cider Donuts

Soft, cakey, spiced donuts.

Preheat the oven to 350 ºF.

In a medium bowl or large bowl, combine 1 cup all-purpose flour, 1 1/2 tsp baking powder, 1/2 tsp baking soda, 1/2 tsp cinnamon, 1/8 tsp nutmeg, 1/8 tsp allspice, and 1/2 tsp salt. Whisk together.

In a separate bowl, combine 1/3 cup maple syrup, 1/3 cup apple cider, 1/4 cup apple sauce, 1 tbsp coconut oil, and 1 tsp vanilla extract. Whisk together.

Add your wet ingredients to the dry ingredients and mix until just combined.

Transfer the batter to a piping bag and pipe into a greased donut pan. Shoot for around 75% full.

Bake for 8-10 minutes, until the donuts spring back when gently pressed.

Let cool in the pan for 5 minutes before transferring to a wire cooling rack and letting them cool completely.

For the glaze, whisk together 1/2 cup powdered sugar and 1 tbsp apple cider in a small shallow bowl.

For the topping, combine 1/4 cup sugar, 2 tsp cinnamon, and 1/8 tsp nutmeg in a separate small bowl.

Once the donuts have cooled completely, dip the donuts into the glaze. Immediately after dipping, coat with a generous sprinkle of the topping.
